Blenditarian Mushroom and Ground Meat Recipes

Today there is something new on the horizon: creating healthier, plant-focused meals that are Earth-conscious and strike a nutrition-sustainability-flavor balance. This is the goal of the Blended Burger Project, a collaboration between the Mushroom Council, The Healthy Menus R&D Collaborative (HMC), and The Culinary Institute of America.

Chefs – including MasterChef Junior finalist Evan Robinson – are using The Blend to achieve that goal.

The Blend™ trend is to add mushrooms to meat.

Mushrooms add

  • an earth-friendly ingredient to a protein source

Healthline defines the umami flavor“Umami is one of the five basic tastes, alongside sweet, bitter, salty, and sour. It was discovered over a century ago and is best described as a savory or ‘meaty’ flavor. The word ‘umami’ is Japanese and means ‘a pleasant savory taste.’ Scientifically speaking, umami refers to the taste of glutamate — or glutamic acid — a common amino acid in vegetable and animal proteins. Studies show that umami-rich foods are more filling so they may aid weight loss by curbing your appetite.”

How to create The Blend™ in your own kitchen.

The Blend 101: How to Blend Mushrooms and Meat

Step 1: Chop your favorite mushrooms to the consistency of ground beef.

This can be done with a knife or food processor.

Step 2: Blend mushrooms with meat.

For fillings (like tacos), sauces, and one-pot meals, saute the mushrooms and the meat in a pan with the spices.

For burgers, meatballs and meatloaf, blend mushrooms and meat together and cook as directed in recipe.
