Egg, Cheese & Bacon Breakfast Cups Add the Wow Factor to Breakfast

These Breakfast Cups with eggs, cheese and bacon will win your family over and add a little WOW! to your morning.

Egg & Cheese Bacon Cups

  • 12 strips uncooked bacon
  • 1 1/2 cups chopped fresh white button mushrooms
  • 4 large eggs
  • 1 tablespoon chopped fresh thyme or oregano
  • 1/4 teaspoon black pepper
  • 1/2 cup shredded Swiss cheese
  • Non-stick cooking spray
Instructions
  1. Preheat oven to 400°F.
  2. While oven is preheating, cook bacon according to package directions until firm but pliable and not crispy. Remove bacon and set aside.
  3. Reserve 1 tablespoon bacon drippings in same skillet used to cook bacon and sauté mushrooms over medium heat for 6-10 minutes until golden brown in color. Set aside to cool.
  4. Spray muffin tin with non-stick cooking spray. Cut six strips of cooked bacon into quarters. Place one full strip of cooked bacon around the side and two quarters of a strip in the base of each of six muffin cups in a muffin tin. Use your fingers to press overlapping ends of bacon together.
  5. In large bowl, beat 4 eggs and whisk in mushrooms, chopped thyme and black pepper.
  6. Pour egg mixture in equal portions intomuffin cups lined with bacon, about 2/3 full in each cup.
  7. Sprinkle equal portions of shredded Swiss cheese into the cups and top each with two quarter strips of bacon.
  8. Place filled muffin tin in oven and bake for 20 minutes, or until egg is completely set, cheese is melted and tops are browned.
  9. Remove muffin tin from oven, use knife to loosen edges, serve and enjoy!

Gluten Free Pancakes
Ingredients
  • 3 large eggs
  • 1 tablespoon water
  • 1 tablespoon vanilla extract
  • 2 tablespoons agave nectar
  • 1 1/2 cups almond flour
  • 1/4 teaspoon salt
  • 1/4 baking soda
  • grapeseed oil, for cooking
Instructions
  1. In large bowl, whisk together eggs, water, vanilla and agave. Add almond flour, salt and baking soda and mix until thoroughly combined. Heat grapeseed oil on skillet over medium low to medium heat.
  2. Scoop 1 heaping tablespoon of batter at a time onto the skillet. Pancakes will form little bubbles, when bubbles open, flip pancakes over and cook other side. Remove from heat to a plate. Repeat process with remaining batter, add more oil to skillet as needed.

Oven Pancakes So You Can Spend Time with Family Instead of the Griddle

Expecting company for the weekend and would rather talk with them than slave over a hot stove? Want to spend more time with the kids than with your griddle? Make oven pancakes!

We have recipes for three different kinds: Lemon Raspberry Oven Pancake, Puffy Apple Oven Pancake and Peachy Oven Pancakes.

Peachy Oven Pancakes
Ingredients
  • Pancake
  • 2 teaspoons margarine or butter
  • 1 1/4 cups Hungry Jack Buttermilk Pancake & Waffle Mix (Just Add Water)
  • 3/4 cup water
  • 2 tablespoons sugar
  • 1 egg
  • 1 can (15 1/4 ounces) sliced peaches, well drained, coarsely chopped
  • Topping
  • 1 cup sliced strawberries
  • 2 (3 1/2-ounce) containers vanilla pudding
Instructions
  1. Heat oven to 375°F. Generously grease 9-inch pie pan with margarine. In medium bowl, combine all remaining pancake ingredients except peaches; beat with wire whisk or low speed on electric mixer until smooth. Fold in peaches. Pour batter into greased pie pan.
  2. Bake at 375°F for 22 to 30 minutes or until golden brown and center springs back when touched lightly.
  3. To serve, run knife around edge of pancake to loosen. Top pancake with strawberries. Spoon pudding over fruit. Cut into wedges to serve.

Puffy Apple Oven Pancake
Ingredients
  • Pancake
  • 1 1/2 cups all-purpose flour
  • 1 1/2 cups milk
  • 6 large eggs
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • 1/2 cup (1 stick) butter
  • Apple Filling
  • 2 large Golden Delicious or Granny Smith Apples, peeled and sliced
  • 2 tablespoons butter
  • 1/4 cup light or dark brown sugar
  • Whipped cream for serving (optional)
Instructions
  1. To make pancake: In a bowl, whisk together flour, milk, eggs, sugar and salt until no lumps remain. Let stand for 30 minutes. (You can mix batter the night before, cover and refrigerate. Remove from refrigerator when you begin preheating oven.)
  2. Preheat oven to 450°F. While oven preheats, place a large slope-sided baking pan or ovenproof skillet into oven and add butter. When butter is melted, remove from oven.
  3. Pour pancake mixture into heated pan and return to oven. Bake pancake for 15 to 20 minutes, until edges are puffed high and golden.
  4. To make apple filling: While pancake bakes, in medium skillet, sauté apples in butter until tender, 5 to 10 minutes. Add brown sugar and stir until dissolved. Transfer to serving bowl.
  5. To serve pancake, be sure guests are at the table when you bring it in, as it will slump quickly. Cut pancake into quarters, and fill each serving with sautéed apples. Pass the whipped cream on the side, if desired.

Lemon Raspberry Oven Pancake
Ingredients
  • 1/2 cup all-purpose flour
  • 1/4 cup plus 2 tablespoons granulated sugar, divided
  • 1/4 teaspoon salt
  • 1 can (12 fluid ounces) Nestlé Carnation Evaporated Lowfat 2% Milk
  • 3/4 cup egg substitute or 3 large eggs
  • 1 1/2 teaspoons grated lemon peel
  • 1/2pint (about 1 cup) fresh raspberries
Instructions
  1. PREHEAT oven to 450º F.
  2. SPRAY 9-inch deep-dish pie plate or cake pan with nonstick cooking spray.
  3. COMBINE flour, 1/4 cup sugar and salt in medium bowl. Whisk evaporated milk, egg substitute, lemon peel and vanilla extract and egg in another medium bowl until blended. Add to flour mixture; whisk for 30 seconds or until smooth. Pour batter into prepared pie plate. Arrange raspberries on top of batter. Sprinkle top with remaining 2 tablespoons sugar.
  4. BAKE for 15 to 20 minutes or until puffed and light golden brown. Serve warm.

Buttermilk Pancakes from Scratch – Just Like Mom’s

Buttermilk Pancakes
Ingredients
  • 2 cups all-purpose flour
  • 1 tablespoon brown sugar
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 3/4 cups buttermilk
  • 2 eggs
  • 1 tablespoon vegetable oil
Instructions
  1. Preheat a lightly oiled griddle over medium-high heat.
  2. Combine flour, sugar, baking powder, baking soda and salt. Make a hole in the center.
  3. In a separate bowl mix egg, buttermilk and oil. Pour milk mixture into flour mixture. Mix until moistened.
  4. Pour or scoop the batter onto the hot griddle. When batter appears to “bubble”, flip it over and brown the other side.

Old Fashioned Pancakes Like Grandma Used to Make
Ingredients
  • 1 cup all-purpose flour
  • 1 tablespoon sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup milk
  • 1 egg
  • 2 tablespoons vegetable oil

  • Fruit Pancakes
  • Add your favorite fruit to the batter: blueberries, raspberries, strawberries. Don’t make the batter too thick or the berries will burn before the middle of the pancake cooks.

  • Nut Pancakes
  • Add 1/2 cup of your favorite nuts to the oil in the above recipe and cook as recommended. Suggested nuts: chopped walnuts, pecans or almonds.
