What is a Snickerdoodle?

A snickerdoodle is a cinnamon cookie. It is in the sugar cookie family, based on a Pâté Sucrée recipe (French sweet pastry).

 McCormick takes it a step further with this ingenius Snickerdoodle Peanut Butter Tart featuring a Snickerdoodle cinnamon cookie crust. It has a cinnamon accented peanut crust, a smooth peanut butter mousse and a chocolate milk ganache on top as a nod to milk and cookies.

Why is this called a Peanut Butter Snickerdoodle Tart instead of a pie?

A pie and a tart both are desserts with a baked crust and a filling. This is where the similarity stops.

  • A pie crust is tender and flaky whereas this tart crust is firm and crumbly like a Snickerdoodle cookie.
  • A pie can have just a bottom crust or both a top and bottom crust. This tart has just a bottom crust.
  • A pie plate has slanted sides. These mini tart pans have straight sides.
  • A pie is usually served in the pie plate. A tart is usually placed on a platter to be served. So find one that will do your Peanut Butter Snickerdoodle Tart justice!

Peanut Butter Snickerdoodle Tart

It’s a peanut butter pie with a cinnamon snickerdoodle cookie crust. Mmmmm!

  • four inch tart pans with removable bottoms
  • 1½ c lightly salted roasted peanuts, lightly crushed
  • 3 Tbsp packed brown sugar
  • 3 Tbsp butter, melted
  • 2 tsp McCormick Ground Cinnamon, divided
  • 3 Tbsp chocolate milk
  • 4 oz  semi-sweet chocolate, coarsely chopped
  • ½ c creamy peanut butter
  • 2 Tbsp  sweetened condensed milk
  • 1 tsp McCormick Pure Vanilla Extract
  • ½ c heavy cream
  1. Heat oven to 350° F. 

  2. To crush peanuts: Place peanuts in large resealable plastic bag. Pound with a rolling pin, mallet or heavy skillet until lightly crushed.

  3. In medium bowl, mix peanuts, sugar, butter and 1/2 teaspoon cinnamon. Remove 1/4 cup and spread on small baking sheet. Divide remaining peanut mixture among four (4-inch) tart pans with removable bottoms. Press firmly onto bottom and sides of each pan.

  4. Bake tart crusts and peanut mixture together 8 minutes. Cool on wire racks.

  5. In medium microwavable bowl, microwave chocolate milk on high 45 seconds. Add chocolate; stir until completely melted and smooth. Set aside.

  6. In large bowl, using electric mixer on medium speed, beat peanut butter, sweetened condensed milk, vanilla and remaining cinnamon until smooth. Add heavy cream; beat until soft peaks form. Spread in prepared tart crusts.

  7. Spread chocolate mixture over top. Refrigerate at least 1 hour, or until ready to serve. Cut each tart in half. Sprinkle with toasted peanut crumble.

Each peanut butter snickerdoodle tart serves 2 people. How romantic!
