In the mood for some tropical flavors? This pineapple coconut smoothie recipe has it all. Start the day in a healthy way, ready for sunshine.
This recipe can be used with either fresh or frozen pineapple chunks. If you’d like to limit your sugar intake, use unsweetened frozen pineapple, shredded coconut and coconut milk.
Pineapple Coconut Smoothie
- 1 ripe banana
- 1 c fresh or frozen pineapple chunks
- 1 Tbsp shredded coconut
- ½ scoop vanilla protein powder optional
- ¼ c coconut milk
- In a blender add banana, pineapple and coconut.
- Add protein powder, if using.
- Pour in coconut milk. Purée for 2 – 3 minutes, or until blended.
- Add ice, if it needs thickening or touch more coconut milk if too thick. Blend again.
- Serve immediately.
